- 14 grams coconut flour (about 2 tbsp)
- 5 grams baking powder (1 tsp)
- 1/8 tsp salt
- 1 large egg, room temperature
- 30 ml oil of choice (about 2 tbsp)
- 40 grams keto maple syrup or sweetener (2 tbsp)
- 15 ml milk of choice (1 tbsp)
- 1/2 tsp vanilla extract

Place the dry ingredients in a microwave-safe mug (minimum 12 oz). Whisk to remove lumps, then add the egg, oil, sweetener, milk and vanilla. Whisk until smooth and evenly combined. Microwave on high for 1 minute 30 seconds, then check with a tester.

If the tester isn’t clean, microwave an additional 30 seconds and test again. Let the cake rest for 2 minutes before serving. Top with whipped cream, frosting, or your favorite low-carb toppings if desired.

- 1/2 tsp baking powder
- 1 large egg, room temperature
- 2 TBS coconut milk
- 1 TBS coconut oil, melted
- 1/2 tsp vanilla extract

- Lightly grease a 12 oz microwave-safe mug. The mug must be large enough because the cake will rise.
- Add the dry ingredients to the mug and stir with a fork until there are no lumps.
- Add the egg, milk, melted oil and vanilla. Stir until fully combined, scraping the sides and smoothing the top.
- Microwave on high for about 1 minute 30 seconds, or until the top is firm and a tester comes out clean. Microwaves vary; adjust time as needed.
- Let cool at least 5 minutes before serving. Top as desired.
- For the chocolate version, replace 1/2 tbsp of coconut flour with 1/2 tbsp cocoa powder.
