Ingredients

  • 1/4 Cup almond slivers, toasted
  • 3 Tbsp raspberry jam
  • 2 Tbsp honey (raspberry flavored if available)
  • 3 Tbsp good quality balsamic vinegar
  • 1 brie wheel
  • 1/2 Cup raspberries

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. While the oven preheats, toast the almonds in a dry frying pan over medium heat. Watch and stir frequently—almonds can burn quickly.
  3. Make the sauce: combine jam, honey, and balsamic vinegar in a small saucepan over medium heat. Stir until the jam and honey have melted, then remove from heat and set aside.
  4. Unwrap the brie and place it on a sheet pan with the wrinkled rind side down. Bake on the middle rack for 5–8 minutes. It’s better to under-bake slightly than to let it run everywhere.
  5. Remove the brie from the oven and transfer it to a serving plate. Top with toasted almonds, raspberries, and the warm sauce. Serve immediately with crackers and garnish with fresh mint, if desired.

Notes

It can be hard to tell exactly when the brie is done. Aim to remove it early if you prefer it to hold its shape; it will continue to soften slightly as it rests.
