How to Make Chocolate Brownies with Easter Eggs

  1. Preheat and prepare. Heat the oven to 350°F (175°C). Line a 9 x 13-inch baking pan with parchment paper, leaving an overhang for easy removal. Spray the parchment and any exposed pan areas lightly with nonstick spray.
  2. Freeze the candy eggs. Put the bag of candy-coated eggs in the freezer while you make the batter. Chilled eggs are less likely to melt when added to the warm brownies.
  3. Make the brownie batter. Melt the butter in a small saucepan over medium-low heat. When melted, stir in the sugar and cook for about two more minutes, stirring constantly. Transfer the mixture to a large bowl, whisk in the cocoa powder, then add the eggs, salt, baking powder, and vanilla. Gradually mix in the flour, about 1/2 cup at a time, until combined. Fold in the mini chocolate chips.
  4. Bake. Pour the batter into the prepared pan and bake for 25–30 minutes. Aim for set edges and a slightly fudgy center—avoid overbaking.
  5. Top with eggs. Remove the chilled candy eggs from the freezer and press them onto the brownies immediately after taking the pan from the oven so they stick without melting.
  6. Cool and serve. Let the pan cool on a wire rack for 10 minutes. Use the parchment overhang to lift the brownies from the pan and transfer them to the rack to cool completely before slicing.
