White Chocolate Truffles

Ingredients
- 300 g (11 oz) White Chocolate
- 50 ml (4 tbsp) Double Cream (Heavy Cream)
- 1 tablespoon Butter
Toppings – So many options: cocoa powder, nuts, sprinkles, coconut, dipped in chocolate, grated chocolate, chocolate strands, sugar strands, icing.
Instructions

Break the white chocolate into small pieces and place in a heatproof bowl set over a larger bowl of simmering or just-boiled water (bain-marie). Stir until the chocolate has mostly melted.

Warm the butter and cream together (microwave in short bursts is fine). Do not let it boil — warm it gently until combined.

Pour the warm cream and butter over the chocolate and stir briskly until smooth and fully combined.

Leave the bowl uncovered in the fridge for at least 2 hours to set.

When set, use a teaspoon to scoop roughly 2 teaspoons of mixture and quickly roll into a ball between your hands. They will be sticky — try not to overwork them or they may soften from the heat of your hands.

Roll each truffle in your chosen topping and place in paper cases or a serving tray.

Enjoy immediately or store in an airtight container in the fridge for up to two weeks.

Making White Chocolate Truffles

Break the white chocolate into pieces, warm the cream and butter, then combine them.


Place the mixing bowl over a larger bowl with hot water and stir until smooth. Chopping the chocolate into small pieces speeds up melting. This can be done on the hob, but using a bain-marie is safer for children.


Chill the bowl UNCOVERED in the fridge for about 2 hours until the mixture is firm enough to scoop.



Use a teaspoon to scoop about two teaspoons of mixture, then quickly roll into a ball. Because the mixture is soft, work quickly to avoid melting them in your hands.
Truffle Topping Ideas

Choose your toppings — cocoa powder, chopped nuts, sprinkles, desiccated coconut, melted chocolate for dipping, grated chocolate, sugar strands or icing. They look lovely served in small tins or paper cases for gifting.

We display a selection on the sideboard over Christmas so guests can help themselves.
When gifting, place truffles in mini paper cases and cellophane bags with ribbons for a pretty presentation.
