This week I’m hoping our A/C gets replaced so I can return to my normal cooking routine. With the summer heat in full swing, I looked for recipes that are both cooling and satisfying—meals that are doable even when it’s hot outside and the family wants lighter fare.

To start the week, I’ll make our family favorite Slow Cooker Chicken Carnitas and double the recipe so we have plenty for lunches. Slow cooker meals are a lifesaver in warm weather: they keep the kitchen cooler while delivering big flavor with minimal hands-on time.

Another comfort on the menu is my son’s second-favorite: a slow, creamy corn and potato chowder. This version is rich and comforting, yet mild and easy to customize. We’ll serve it with crusty bread or a simple green salad for a satisfying weeknight meal.

Later in the week we’ll enjoy Turkey Bacon BLT sandwiches, paired with lots of fresh fruit and vegetable crudités—peaches, strawberries, and crisp veggie sticks make simple sides that keep meals bright and fresh.

Summer in Southern California will be warm, but I’m confident the slow cooker and a few cool side dishes will help us stay comfortable and well-fed.

  • Saturday – Special day: hosting a baby sprinkle. The boys will be on their own!
