Savory Crab Fried Rice with Garlic and Scallions

This Thai-style crab fried rice feels a little special while still being simple enough for a weeknight. It’s garlicky and lightly seasoned so the natural sweetness of the crab shines through without feeling heavy or oily.

It comes together quickly from common pantry ingredients. If you keep leftover rice and a container of crab on hand, this dish is an easy, fast dinner with minimal planning.

The seasoning echoes Thai basil fried rice, but here the focus is on tender lump crab folded in gently at the end so it remains chunky. Compared with Vietnamese-style fried rice that often uses shrimp and Chinese sausage, this version is lighter and more seafood-forward.

Why This Crab Fried Rice Works

The flavor is clean and balanced. Garlic and green onions build the savory base, scrambled eggs add richness, and the crab is added last so it warms through without falling apart. The result is a mild, family-friendly dish that still satisfies adults and reheats well for lunch the next day.

Ingredient Notes

Use cold, day-old rice for best texture; fresh rice can be used if spread out and chilled so it won’t clump. Sweet lump crab makes a big difference — it delivers flavor without a heavy sauce. If you choose canned crab, drain it well and check for shell fragments.

Soy sauce and oyster sauce provide subtle seasoning; you don’t need much because crab can be naturally salty. Thai basil and lime are optional but add a fresh finish when available.

How to Make Crab Fried Rice (Overview)

Heat the pan well; fried rice benefits from high heat once the rice goes in. Cook the garlic and the white parts of the green onions until fragrant, then add the carrots or other quick-cooking vegetables. Push everything to one side and scramble the eggs in the pan until just set, then mix them with the vegetables.

Pan with oil sliced green onions and minced garlic.

Add the rice and seasonings, spreading the rice so it can toast briefly. Let it sit undisturbed for a minute or two before stirring to develop texture. Finally, fold in the crab gently so it stays chunky and warm; finish with the green parts of the onions, Thai basil if using, and a squeeze of lime.

Tips for the Best Crab Fried Rice

  • Use cold, day-old rice so it fries instead of steaming.
  • Let the rice sit briefly before stirring to build texture.
  • Fold the crab in gently so it stays chunky.
  • Taste at the end and adjust seasoning, since crab saltiness can vary.
  • If you don’t have Thai basil, Italian basil or cilantro can work as substitutes.

What to Serve with Crab Fried Rice

This fried rice is great on its own but also pairs well with other textures and flavors. Crisp fried spring rolls or Vietnamese egg rolls make a natural accompaniment. For a lighter contrast, sliced cucumbers or a simple cucumber salad balance the richness.

Grilled shrimp, lemongrass chicken, or a simple vegetable stir-fry like water spinach (rau muong) are complementary mains. If you enjoy heat, serve chili garlic sauce on the side. Finish with a cool, refreshing dessert if you like a contrasting sweet note.

How to Store and Reheat

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet over medium heat to restore some texture, or use the microwave with a small splash of water to keep the rice from drying out. Freezing is not recommended because crab loses texture after thawing.

Crab Fried Rice

Author: Quynh Nguyen

A quick, flavorful crab fried rice made with day-old rice, garlic, eggs, and sweet lump crab. A simple one-pan meal that comes together fast and lets the crab shine without heavy seasoning.

Prep: 8 mins • Cook: 8 mins • Total: 16 mins • Servings: 6 • Cuisine: Thai

Ingredients

  • 3 cups cooked and cooled white rice (preferably day-old)
  • 1 cup lump crab meat
  • 2 tablespoons vegetable oil (or avocado, olive, or peanut oil)
  • 3 green onions, thinly sliced (white and green parts separated)
  • 2 cloves garlic, minced
  • ½ cup shredded carrots (or any quick-cooking vegetable)
  • 2 eggs, lightly beaten
  • ½ tablespoon soy sauce or fish sauce
  • 1 tablespoon oyster sauce
  • ½ tablespoon sesame oil
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 teaspoon sugar
  • Optional for garnish: Thai basil, extra green onions, lime wedges

Instructions

  1. Prep. Make sure the rice is fully cooled and broken up. Have all ingredients ready because this dish cooks quickly.
  2. Cook the aromatics. Heat oil in a wok or large skillet over medium-high heat. Add the white parts of the green onions and the garlic. Cook 1–2 minutes until fragrant.
  3. Add vegetables. Stir in the carrots and cook another 1–2 minutes until just tender.
  4. Scramble the eggs. Push everything to one side of the pan, pour in the eggs, and scramble gently until just set. Mix the eggs into the vegetables.
  5. Fry the rice. Add the rice, soy or fish sauce, oyster sauce, sesame oil, salt, pepper, and sugar. Stir to coat evenly, then spread the rice out and let it sit undisturbed for 1–2 minutes to develop texture.
  6. Add the crab. Gently fold in the crab meat so it stays chunky. Let the rice sit again briefly, then stir once more and adjust seasoning if needed.
  7. Serve. Garnish with the green onion tops, Thai basil if using, and a squeeze of lime. Serve hot.

Notes

  • Cold, day-old rice gives the best texture; fresh rice tends to clump.
  • Fold crab in gently at the end so it remains intact.
  • Letting the rice sit briefly before stirring helps it crisp rather than steam.
  • Taste and adjust seasoning at the end; crab saltiness varies.
  • Skip Thai basil if unavailable; the dish is still excellent without it.
