It’s hard to believe that two years ago we were in the middle of a pandemic and decided to start this blog. As we celebrate Skandibaking’s second anniversary this week, I wanted to take a moment to reflect on the journey so far.
The idea to create this blog sprang from boredom and a renewed love of baking. In the months leading up to Skandibaking’s launch in September 2020, Sofie and I spent countless hours baking together over FaceTime. We wanted a shared project where we could document recipes, experiments, and the things we learned — and Skandibaking was born.


We chose to run the blog together because it combines many of our passions and gives each of us a place to contribute our strengths. We both enjoy baking and recipe development, especially when we can experiment and get creative. I’m more at home working with bread dough and yeasted recipes, while Sofie excels at technical bakes and elegant desserts. On the visual side, Sofie’s photography, videography, editing, and design shape the aesthetic of everything you see on the site. I happily follow her lead on styling and production because she has a great eye for detail.
Writing is my strength, so I take responsibility for the text across the blog and our social channels. Blogging regularly took some getting used to, but after two years it feels like a comfortable routine. I’m also a bit less camera-shy than Sofie, so I often do voiceovers and appear in short videos, though we’re both working on putting ourselves out there more to build a closer connection with our followers.
Since 2020 we’ve reached important milestones, but the path hasn’t been without challenges. Social media growth has been slow at times because the baking and food space is crowded. We expected this and committed to consistent effort and steady improvement. Lately we’ve seen encouraging growth, especially as we focus more on video content — a format that feels increasingly important for reaching new audiences.

Another ongoing challenge is working from different cities, and for the past year, different countries. Coordinating across time zones requires careful planning and lots of communication so posts, photos, and videos line up. Despite the extra effort, being involved in every stage of Skandibaking — from recipe testing to final edits — makes the work rewarding. Seeing a finished post or a new video live on Instagram or TikTok never gets old.
The best part of all this has been watching people try our recipes. We love seeing your photos, reading your comments, and hearing about your results — even when things don’t go perfectly. Interacting with you in Instagram DMs, TikTok comments, emails, and on this site keeps us motivated. Thank you for following our journey for the past two years. With continued effort and a bit of luck, we hope to share many more years of baking, learning, and creating with you.
