These Sparkling Strawberry Floats are a refreshing afternoon sipper on a hot day and make a light, fruity summer dessert.

When the heat rises, we prefer desserts that are light, cold, and easy to enjoy. Heavy baked treats feel overwhelming on hot days, so these floats were exactly what we wanted after a recent backyard BBQ. I’ve also started making them as an afternoon treat for the kids — they can’t get enough.

HemisFares gelato varieties are crafted with regional Italian ingredients and milk from 100% grass-fed cows. Each flavor is slow-churned for a creamy, smooth texture and bold flavor. The new line at Kroger features products that are individually sourced and imported from their country of origin, each sealed with a unique “find number.” I chose HemisFares Strawberry Gelato — FIND NO. 54 — and the flavor was outstanding.

We’ve been enjoying Sparkling Strawberry Floats all summer long. They’re ideal for cooling off when temperatures soar — we reached extremes recently and these were a lifesaver. The combination of creamy strawberry gelato, a touch of sweetened coconut, and lemon-lime soda is light, fizzy, and satisfying. The kids have happily had two in one sitting on particularly hot afternoons.

One helper in the kitchen couldn’t resist trying HemisFares Stracciatella Gelato. It’s hard to pass up Italian sweet cream with dark chocolate flakes — that’s Find #52 and it’s just as lovely as it sounds.

I shop at my local Fry’s (part of the Kroger family) and I’m thrilled they’re carrying HemisFares products. It’s wonderful to find high-quality, imported items without having to visit a specialty store.

To make assembly quick, I pre-scooped the gelato onto a baking sheet using a size 24 scoop and refroze the portions. That way the scoops stayed firm and didn’t melt into the soda as I put the drinks together.

These Sparkling Strawberry Floats are the perfect afternoon sipper on a hot day or a light summer dessert.
Ingredients
- 4 Tbsp Sweetened Cream of Coconut
- 1 pint HemisFares Strawberry Gelato
- Lemon Lime Soda
- Whipped Cream (optional)
Instructions
- Set gelato out to soften for a few minutes, then scoop 12 scoops onto a baking sheet using a size 24 scoop. Return the sheet to the freezer and freeze the scoops for about 2 hours.
- Place 1 tablespoon of sweetened cream of coconut in the bottom of each of four 10 oz glasses. Add three scoops of gelato to each glass, then pour lemon-lime soda to fill. Top with whipped cream if desired, add a straw, and serve immediately.
