An easy peri peri chicken that’s spicy, tangy and smoky thanks to a homemade marinade of chilies, garlic, lemon and smoked paprika. Roast or grill until charred for juicy, flavorful results—also great with rice for a complete meal.

Ingredients

Chicken

  • 6 chicken quarters
  • 2 red peppers
  • 1 small onion
  • 5 cloves garlic
  • 1 small lemon, (juiced)
  • 1.5 tbsp salt
  • 1 tbsp black pepper
  • 1 handful thyme and rosemary
  • ¼ cup olive oil
  • 1 tbsp smoked paprika
  • 5 sun dried tomatoes
  • 1 bird’s eye chili

Rice

  • 3 cloves minced garlic
  • ½ onion, (diced)
  • 1 red pepper, (diced)
  • 2 cups basmati rice
  • 2 tbsp reserved marinade
  • 1 tsp smoked paprika
  • 1 cup frozen peas
  • 2 cups water or chicken broth

Instructions

Chicken

  • Roast the two bell peppers at 400°F until the skins are lightly charred. Let them cool, peel and remove seeds, then place the flesh in a food processor.

  • Add the remaining marinade ingredients to the processor—onion, garlic, lemon juice, sun-dried tomatoes, bird’s eye chili, smoked paprika, salt, pepper, herbs and olive oil. Blend until mostly smooth; a slightly chunky texture is fine. Taste and adjust salt or heat as needed.

  • Reserve 2 tablespoons of the marinade for the rice, then set it aside.
  • Pour the remaining marinade over the chicken quarters, rubbing it under the skin when possible. Marinate for at least 1 hour, preferably overnight for deeper flavor.

  • Cook the chicken: air fry at 350°F for 20–25 minutes, or roast at 400°F for 25–30 minutes, until the internal temperature reaches 165°F and the skin is crisp and charred in spots.

Rice

  • Sauté the minced garlic, diced onion and diced red pepper in a pan until softened and fragrant.
  • Add the basmati rice, the reserved 2 tablespoons of marinade and 1 teaspoon smoked paprika. Stir to coat the rice evenly.
  • Transfer the mixture to a rice cooker or pot and add 2 cups water or chicken broth. Cook according to your rice cooker or package instructions.
  • When the rice is done, stir in 1 cup frozen peas and let them steam until heated through.
  • Serve the fragrant peri peri rice alongside the chicken and enjoy.
