Instructions

  • Preheat the oven to 375°F (190°C). Prepare a 9×13-inch casserole dish.
  • In a medium pot (off the heat), whisk together 3 cups chicken or bone broth, 1 1/2 cups canned full-fat unsweetened coconut milk, 1/2 cup arrowroot or potato starch, 1 1/2 tsp garlic powder, 1 1/2 tsp onion powder, 1 1/2 tsp salt, 1 tsp black pepper, 1 tsp dried parsley, and 1/4 cup nutritional yeast until smooth.
  • Place the pot over medium heat and cook, stirring regularly, until the mixture becomes very thick, about 8 minutes.
  • In the casserole dish layer the frozen riced cauliflower (about 1 12-oz bag or 3 cups), the frozen broccoli florets (about 16 oz), and the cubed chicken (about 1 1/2 lb). Pour the thickened sauce evenly over the top.
  • If using the optional crumb topping, mix 1 cup almond flour with 1/4 cup melted ghee or compliant vegan butter until just combined and sprinkle over the casserole.
