We made this shrimp scampi alfredo for Valentine’s Day at home. With kids and busy schedules, going out to eat isn’t always practical — and honestly, a cozy dinner at home often feels nicer than battling a crowded restaurant. This lighter Alfredo tastes like something from a bistro if you dim the lights and ignore the toys and fingerprints. Best of all, it’s incredibly fast: about 10 minutes of hands-on time once the pasta water boils. It’s hard to beat that for a homemade meal. Lightened Up Shrimp Scampi Alfredo

This quick and easy shrimp Alfredo is much lighter than the traditional version and every bit as satisfying.

Ingredients

  • 12 oz. pasta of your choice
  • 1 tbsp. butter
  • 1 tbsp. flour (all purpose, rice, or spelt flour all work)
  • 1 c. milk
  • 12 oz. package frozen SeaPak Light Shrimp Scampi
  • 2 tbsp. grated Parmesan cheese

Instructions

  1. Bring a large pot of lightly salted water to a boil. Cook pasta according to package instructions, then drain.
  2. While the pasta cooks, melt the butter in a large skillet over medium heat. Whisk the flour into the butter until smooth. Add the milk gradually, about 1/4 cup at a time, whisking until smooth before adding more.
  3. When the milk is fully incorporated, add the frozen shrimp scampi and reduce the heat to medium. Cook 5–8 minutes, stirring and turning the shrimp frequently. The shrimp are done when they turn pink and curl into a C-shape. Avoid overcooking.
  4. Remove the skillet from the heat and stir in the Parmesan until melted. Serve the shrimp scampi Alfredo over the hot pasta.
