Vegan Zuppa Toscana Pot Pies
Ingredients
For the “Parmesan” Pie Crust
- 2 1/2 Cups All purpose flour
- 1 teaspoon Salt
- 1/3 Cup Vegan Parmesan (I used Follow Your Heart)
- 3/4 Cup Cold vegan butter (I used Earth Balance)
- 1/2 Cup Ice cold water
- Oil for brushing the tops
For the Zuppa Toscana Filling
- 1 Cup Raw cashews, soaked*
- 1 Cup Unsweetened non-dairy milk (soy works well)
- 1 Tablespoon Olive oil
- 1 Pound Vegan Italian sausage (about 4 sausages; I used Beyond Meat)
- 4 Cloves Garlic, chopped
- 1/2 a Sweet onion, chopped
- 1 Large Russet potato, diced
- 3 Cups Vegetable broth
- 1 teaspoon Lemon juice
- 4 Ounces Kale, chopped
- Pinch of Red pepper flakes
- Salt and pepper to taste
Instructions

Make the pie crust first: sift the flour into a large bowl, add salt and vegan Parmesan, and stir to combine.

Cut the cold vegan butter into small pieces and distribute it through the flour. Using your fingers or a fork, press until the mixture resembles coarse sand.

Add ice cold water a little at a time, stirring until the dough comes together. Knead briefly to form a smooth ball, cover, and chill while you make the filling.

Make the cashew cream: drain soaked cashews, add them to a blender with non-dairy milk and a pinch of salt and pepper, and blend until completely smooth. Set aside.

Heat olive oil in a large pot over medium heat. Remove casings from vegan sausages if present, crumble or break them into chunks, and brown in the pot for about 5–6 minutes. Remove and set aside.

Add more oil if needed, then sauté garlic, onions, and diced potatoes over medium heat until onions are translucent and potatoes begin to soften, about 5–6 minutes. Season with salt and pepper.

Add vegetable broth, lemon juice, and a pinch of red pepper flakes. Bring to a simmer, then reduce heat and simmer 5–10 minutes until potatoes are nearly tender.

Stir in chopped kale and the cashew cream. Simmer 1–2 minutes more until the filling thickens slightly. Taste and adjust seasoning, then add the browned sausage back in. Turn off the heat.

Preheat the oven to 400°F (200°C). Remove the pie crust from the fridge and let soften slightly if too firm to roll.

Divide the filling among four 10-ounce ramekins or pour into one large pie dish.

Roll the chilled dough on a floured surface to about 1/8-inch thickness. Cut four circles slightly larger than the ramekins, or shape to cover a single pan.

Place crusts over the filling, seal edges, and pierce the tops to vent. Brush with oil.

Bake on a sheet tray for 15–18 minutes, or until the crust is golden and cooked through. Serve topped with extra vegan Parmesan and fresh herbs if desired.
