What type of potatoes for pot pie?

How to make the Ninja Foodi turkey pot pie
Step 1: sauté the veggies
Select Sauté mode on the Ninja Foodi and set it to medium or medium-high. Melt the butter in the pot, then add diced onion, chopped carrots, celery, minced garlic, sliced mushrooms, fresh thyme, salt, and pepper. Cook for about 5 minutes, stirring occasionally, until the onions turn translucent and the vegetables soften and become fragrant.
Step 2: add the turkey and potatoes

Step 4: add the flour and cream
With the lid open, stir in the flour and heavy cream to thicken the filling. Mix thoroughly until the sauce coats the vegetables and turkey and becomes noticeably thicker. If the filling still seems thin, switch to Sauté and cook for 3–5 minutes, stirring constantly. Add extra flour a tablespoon at a time if needed to reach the desired consistency.
Step 5: cover with puff pastry and air fry
Roll one sheet of thawed puff pastry large enough to cover the top of the Foodi pot. Use the inner air fryer basket as a template if helpful; remember the basket is slightly smaller than the pot, so roll the pastry a little larger than the basket circumference. Drape the pastry over the filling and crimp or tuck the edges as needed.
For a glossy, golden finish, brush the pastry with a beaten egg. Set the Ninja Foodi to Air Fry at 400°F and cook for about 8 minutes, or until the pastry is puffed and nicely browned.
Step 6: scoop and serve
Use wooden or silicone utensils to protect the Foodi’s nonstick surface. Scoop portions into bowls and serve hot. This pot pie is excellent on its own or alongside a simple green salad.
