Toffee Pretzel Cookies are crisp at the edges with a warm, chewy center, loaded with sweet toffee pieces and crunchy salty pretzels for the perfect sweet-and-salty cookie experience.

Toffee Pretzel Cookies

These cookies combine a tender, slightly gooey interior with lightly crisped edges. Sweet toffee bits melt into pockets of caramel flavor while tiny pieces of pretzel add crunch and a touch of saltiness that balances the sweetness. They bake up beautifully and are an easy, crowd-pleasing treat for holiday cookie trays, bake sales, or any time you want a comforting, nostalgic cookie.

What Kind of Pretzels Should I Use?

Smaller pretzel varieties work best. Mini twists or small rods are ideal because they mix in easily and add bite-sized crunch throughout the dough. Avoid very large, thick pretzels that won’t incorporate evenly into the cookie dough.

What Type of Toffee Should I Use?

Store-bought toffee bits (often labeled Heath or toffee baking bits) are convenient and reliable — you’ll usually find them in the baking aisle near chocolate chips. If you have time, homemade toffee broken into slightly larger chunks offers an even richer, fresher toffee flavor and creates standout pockets of caramelized toffee in each cookie.

Do I Have to Chill the Dough?

Chilling the dough is optional. A brief chill (1–2 hours) deepens the flavor and can help control spreading, producing a slightly thicker cookie with chewier texture. That said, these cookies also bake up very well straight from the mixer if you’re short on time.

Toffee Pretzel Cookies Variations

Customize the basic cookies to suit your taste or to make them extra-decadent:

  • Chocolate: Stir in chocolate chips or chunks for additional chocolate flavor. Use half chocolate, half toffee, or replace the toffee entirely if you prefer a chocolate-forward cookie.
  • Sea salt: Lightly sprinkle flaky sea salt on the tops of the cookies right after baking for a professional-looking finish and an extra salty pop.
  • Different chips: Try butterscotch, cinnamon, or peanut butter chips in place of or in addition to the toffee bits for subtle flavor shifts.
  • Chocolate-covered pretzels: Use chocolate-covered pretzels for a deeper chocolate-and-salt profile.

Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup butter, room temperature
  • 1¼ cups firmly packed brown sugar
  • ¼ cup granulated sugar
  • 2 teaspoons vanilla
  • 2 large eggs
  • 1 cup toffee bits (store-bought or homemade)
  • 1 cup crushed pretzel pieces

Instructions

  1. Preheat your oven to 325°F (163°C) if you plan to bake immediately.
  2. In a large bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a separate large mixing bowl, beat the butter and both sugars until light and fluffy. This usually takes a couple of minutes with an electric mixer.
  4. Add the vanilla and mix until incorporated.
  5. Beat in the eggs one at a time, mixing well after each addition.
  6. Slowly add the flour mixture to the wet ingredients and beat on low speed until fully combined. Do not overmix.
  7. Fold in the toffee bits and crushed pretzel pieces by hand to distribute them evenly without breaking them up too much.
  8. Optional: Chill the dough for 1–2 hours to develop flavor and reduce spreading. If chilled, allow the dough to sit at room temperature for about 30 minutes before scooping.
  9. Scoop about 2 tablespoons of dough per cookie and place onto a cookie sheet lined with parchment paper or a silicone baking mat. Leave at least 2 inches of space between cookies.
  10. Bake in a 325°F oven for 12–13 minutes, or until the edges are lightly browned. The centers may still look slightly underbaked — that’s normal. Let cookies rest on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • Chilling: If you chill dough, bring it to room temperature for about 30 minutes before baking so cookies bake evenly.
  • Storage: Unbaked dough can be refrigerated for up to 3 days. Baked cookies keep well covered at room temperature for up to 1 week.
  • Freezing: Baked cookies freeze up to 3 months. Unbaked dough balls also freeze well for up to 3 months — bake from frozen, adding an extra minute or so to the baking time; no thawing required.
