
Stuffing is one of those dishes that rarely looks as appealing as it tastes. For me, the appeal comes from the moment I know how it will taste: the savory bread, tender vegetables and aromatic herbs combine into something far more inviting than its appearance might suggest. As a child I avoided stuffing because it seemed “wet” or had bits I didn’t recognize. Now, that very combination of textures and flavors is exactly what I crave.
This recipe is a roasted garlic stuffing that brings a rich, mellow garlic flavor to the classic sage-and-vegetable base. Roasting a whole head of garlic softens its bite and deepens its sweetness, so the finished dish tastes a little like garlic bread folded into traditional stuffing flavors. Baked in a casserole until the top is crisp and the interior stays moist, this dish pairs beautifully with turkey and gravy.
For the version shown here I used a mix of whole-grain and plain white bread cubes, but I recommend choosing a mild-tasting bread so the roasted garlic remains the star. A strongly flavored multi-grain loaf can compete with the garlic and herbs rather than complement them.
One practical advantage of this approach is timing: you can roast the garlic while the bird cooks, then finish the stuffing in the oven as the turkey rests. That makes it simple to coordinate the meal so everything comes together hot and ready to serve. The recipe scales easily, so you can double it for larger gatherings and bake in a 9×13-inch pan.

Roasted Garlic Stuffing
1 head of garlic, top trimmed off
3 tbsp butter
1 cup onions, diced
3/4 cup celery, diced
1 tsp rubbed sage
1/4 tsp cayenne pepper (optional, for a hint of warmth)
8 cups white or other mild bread cubes
1 1/4 cups vegetable, chicken or turkey stock
salt and pepper, to taste
Preheat the oven to 350°F (175°C). Wrap the trimmed head of garlic in aluminum foil and roast for 60–75 minutes, until the cloves are very soft and easily mashable. This can be done ahead of time and kept at room temperature once cooled.
In a sauté pan over medium heat, melt the butter and cook the diced onions and celery until the onions are just tender, about 6–8 minutes. Stir in the sage and cayenne pepper, allowing the herbs and spice to release their aroma. Squeeze the roasted garlic from the head into the pan and mash the cloves into the vegetable mixture with a spatula or fork until well combined.
Place the bread cubes in a large bowl. Add the garlic-vegetable mixture and pour in the stock. Season with salt and pepper, then stir gently but thoroughly so the bread absorbs the liquids and the ingredients are evenly distributed.
Transfer the mixture to a lightly greased 8×8-inch casserole dish and cover tightly with foil. Bake for 20 minutes with the foil on, then remove the foil and bake an additional 15 minutes to crisp the top. Serve hot.
Serves 4–6.
