These mini crustless quiches are perfect as appetizers, party platter additions, lunchbox treats, or a savory snack. Caramelized onions bring a sweet, complex flavor that pairs beautifully with a touch of garlic. I often use dried rosemary, but feel free to swap in any fresh herb you prefer.

The star of these quiches is the caramelized onion: slowly cooked until its natural sugars darken and concentrate, creating a rich, savory-sweet base. Paired with creamy Brie, which melts to a buttery, delicate texture, each mini quiche offers a satisfying contrast of flavors and textures.
Carbs in onions
Onions are relatively low in carbohydrates, though the amount varies by type and size. A general guide:
- One medium onion (about 110 g) contains roughly 9–10 grams of carbohydrates.
- About 2–3 grams of those carbs are dietary fiber, which supports digestion.
- The remaining carbs are mainly natural sugars, with a small amount of starch.
Ingredients

- Onions – yellow onions are recommended; red onions may be substituted.
- Cream – heavy cream for richness.
- Brie – mild and buttery; other melty cheeses can be used if preferred.
- Red pepper – or use yellow/orange bell pepper.
- Garlic – minced; add more if you like a stronger garlic flavor.
- Rosemary & Thyme – fresh or dried, to taste.
How to make mini crustless quiche

Slowly cook thinly sliced onions in olive oil until deeply caramelized.

Add chopped red pepper and minced garlic, cooking briefly until softened.

Whisk eggs with cream and seasonings until combined.

Divide the onion mixture and Brie among greased mini muffin cups, pour in the egg mixture, and bake until set.
Storage
Allow the quiches to cool, then transfer to an airtight container and refrigerate. They keep well for up to 3 days. Serve chilled or reheat briefly in the oven until warmed through.
Recipe Variations
Try these simple variations to change the flavor profile:
- Spinach & Mushroom: Sauté spinach and mushrooms with the onions for an earthy, hearty filling.
- Bacon: Add crispy crumbled bacon for a smoky, savory twist.
- Sun-Dried Tomato & Basil: Stir in chopped sun-dried tomatoes and fresh basil for a tangy, aromatic version.
- Gruyère: Swap or combine Brie with Gruyère for a nuttier, more robust flavor.
