Pork tenderloin is sold in the meat section of most supermarkets in long, sealed packages. For this recipe you’ll need about two pounds of tenderloin, which is typically two pieces. The ingredient list is short and straightforward, so it’s an excellent weeknight or weekend option.

How to make Ginger Glazed Pork Tenderloin:

Scroll to the recipe card below for the full, printable recipe. Place the tenderloins on a rack in a roasting pan and lightly sprinkle with salt. The glaze is a simple mix of apricot jam, minced garlic, water, soy sauce and freshly grated ginger. Spread the glaze over the pork and bake at a high temperature for about 20–25 minutes until the internal temperature reaches 145°F. Let the meat rest after removing it from the oven so the juices redistribute. It’s quick, simple, and reliably tasty.

Weight Watchers friendly:

To make this recipe more compatible with Weight Watchers, choose a reduced-sugar apricot jam. The recipe makes four servings (or six, according to the recipe card), so divide the cooked pork accordingly to match your plan.

How to grate ginger:

Fresh ginger can be fibrous and tricky to grate. For an easier method, peel the ginger with a vegetable peeler and freeze it until firm. Grating frozen ginger gives a finer, less stringy result, and leftover peeled ginger can be stored in a sealed bag in the freezer for later use. Use the fine side of a grater for best results.

Safe internal temperature for pork:

Modern guidelines recommend cooking pork to an internal temperature of 145°F for safety and best texture. Bake this tenderloin until a meat thermometer inserted into the thickest part registers 145°F, then remove it from the oven and allow it to rest for about 10 minutes; the temperature will rise slightly during resting.

Use a meat thermometer:

For accurate results, use a meat thermometer. A probe-style remote thermometer can stay in the meat while it roasts, and an instant-read thermometer is handy for quick checks and grilling. Both types are useful to ensure the pork is cooked perfectly without overcooking.
